🍖 Recipe: Stittsworth Bacon-Wrapped Filet Mignon
An elegant yet impressive Father's Day centerpiece -- tender Stittsworth filet mignon wrapped in Stittsworth bacon and finished with a simple pan sauce.
Ingredients
- 4 Stittsworth Filet Mignon steaks (6 oz each, 1.5 inches thick)
- 8 strips Stittsworth Bacon
- 3 tablespoons butter
- 4 cloves garlic, crushed
- 1 cup beef broth
- 1/2 cup dry red wine
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- Sea salt and black pepper
- 2 shallots, minced
- 1 tablespoon Dijon mustard
Instructions
- Wrap each Stittsworth filet with 2 strips of Stittsworth Bacon, securing with toothpicks if needed.
- Season wrapped filets generously with salt and pepper on all sides.
- Heat a cast iron skillet over medium-high heat, then add 1.5 tablespoons of butter.
- Sear bacon-wrapped filets 3--4 minutes per side for medium-rare, ensuring bacon crisps slightly.
- Transfer filets to a warm plate and tent loosely with foil to rest.
- In the same skillet, add remaining butter and sauté shallots and garlic for 1 minute until fragrant.
- Deglaze pan with red wine, scraping up browned bits, then add beef broth, thyme, and rosemary.
- Simmer sauce 5--7 minutes to reduce by half, then stir in mustard and adjust seasoning.
- Plate filets and spoon pan sauce around each steak.
- Remove toothpicks and garnish with fresh herb sprigs before serving.
